School Lunches Finally Get the Appreciation They Deserve
During lunch duty yesterday, I was dismissing the 2nd graders from the cafeteria when one boy approached me on his way out the door.
"Excuse me," he said, politely.
"Yeah," I responded, distractedly (I still had more tables to dismiss).
"Um, excuse me," he repeated, pointing to the lunch ladies working behind the serving counter, "but can you tell those teachers for me that they are really good cookers?"

A Visit with Family
This past weekend, my mom and grandmother came through town for a quick visit on their way back from Oklahoma. We had a great time eating out, shopping, and catching up. We found a couple of unique Colorado Springs stores that I'd never been to before, including a huge antique store that my mother had heard about from her cousin, and this amazing toy store downtown! It was fun exploring my city with new eyes and remembering how much I love (and can't wait to get back to) our downtown. Saying goodbye was bittersweet knowing that I won't get to see my mom and grandma again until after the baby is born.

Chicken Salad Sandwich Recipe
I had some leftover chicken tonight after using what I needed to make dinner, so Nathan suggested I try to make chicken salad with it.
He had a very good reason for this suggestion.
One of the only foods I have really craved since getting pregnant are the chicken salad sandwiches served at my favorite local coffee shop, Nemo's. Nathan and I stopped there after my last doctor's appointment and I made the mistake of ordering a small salad. Nathan ordered their chicken salad sandwich and I just could not stop stealing bites of it. Since then, I have thought of that sandwich often. Unfortunately, Nemo's doesn't have the most convenient hours for sandwich cravings (at least not for a working woman) so I have yet to get my hands on another one.
I will, though. Soon.
In the meantime, I modified a recipe I found on the Internet and I think it will substitute nicely!
Enjoy!
Chicken Salad Sandwiches
3 c. finely chopped cooked chicken
2 hard boiled eggs, chopped
3 tbsp. sweet pickle relish
1/4 tsp. salt
1/3 c. mayonnaise
Sandwich bread
Combine first 5 ingredients and chill in covered container until ready to serve.

30 Eve (Nathan Makes a Blog Entry On His Last Night as a Twenty-Nine Year-Old )
30 Eve
30 Eve
I can't believe
It's 30 Eve
Autumn days are getting shorter
Time to get my $#!% in order
There's no time for standing still
The Reaper chases up the hill
See another decade goin'
Feel the little baby growin'
Pretty wife will soon be showin'
Feel the winds of change a'blowin'
October chill is setting in
And now the countdown will begin
It's 3...2...1... to Big 3-0
Away my roaring twenties go
And so what now am I to do?
My friend, I still don't have a clue
Just thank the Lord for all I've got...
...and do a midnight whiskey shot!
Three (times ten) cheers for maturity!
